A cook specializing in Dominican, Cuban, and Colombian food for a supermarket is responsible for preparing, cooking, and displaying high-quality, authentic Latin Caribbean and South American dishes. This role involves managing a high-volume hot food counter or "steam table," ensuring food safety, maintaining consistent flavor profiles, and providing fast, friendly service to customers.
Core Responsibilities
• Food Preparation: Cleaning, cutting, and marinating ingredients, including meat (pork, chicken, beef) and vegetables, following traditional recipes.
• Authentic Cooking: Specializing in specific, varied cuisines:
o Dominican: Preparing dishes like Mangú (mashed plantains), Sancocho (stew), La Bandera (rice, beans, meat), and Tostones.
o Cuban: Making Ropa Vieja (shredded beef), Moros y Cristianos (rice and beans), and roasted pork.
o Colombian: Preparing items such as Empanadas, Arepas, and Sancocho.
• Hot Food Station Management: Preparing rice, beans, meats, and fried items for steam trays, ensuring they are replenished, well-seasoned, and held at proper temperatures.
• Safety and Sanitation: Adhering to food safety guidelines, including taking and recording food temperatures, cleaning workstations, and sanitizing equipment.
• Customer Service: Serving customers directly, engaging with them, and answering questions about menu items.
• Kitchen Maintenance: Cleaning and maintaining cooking utensils, grills, fryers, and work areas to ensure a safe, efficient environment.
Key Skills and Requirements
• Culinary Knowledge: Experience with traditional Caribbean and Latin American seasoning (e.g., sofrito, achote) and cooking methods.
